Crispy Buffaque Chicken Wings

Oven-crisped wings tossed in a buffalo–BBQ butter sauce with ranch and crudités.

Ingredients

Chicken wings

  • 4 lbs chicken wings
  • 2 tablespoons baking powder
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • Avocado oil spray

Buffalo BBQ sauce

  • ¼ cup Sweet Baby Ray’s BBQ sauce
  • 2 tablespoons Frank’s RedHot
  • 2 tablespoons butter

To serve

  • Ranch dressing
  • Celery sticks
  • Carrot sticks

Method

  1. Preheat the oven to 475°F. Line a rimmed baking sheet with parchment paper and place a cooling rack inside. Spray the rack generously with cooking oil.
  2. Pat the chicken wings very dry with paper towels.
  3. In a large bowl, combine the wings, baking powder, salt, and pepper. Toss until evenly coated.
  4. Place the coated wings on the prepared rack. Spray generously with cooking oil.
  5. Bake at 475°F for 15 minutes, until golden. Flip, spray with oil, then bake another 15 minutes until golden brown and crispy.
  6. While the wings cook, make the sauce: microwave the butter until liquid, stir in Frank’s RedHot, then stir in the BBQ sauce.
  7. Transfer the cooked wings to a large bowl. Pour the warm Buffalo BBQ sauce over and toss until evenly coated.
  8. Serve hot with ranch dressing, celery sticks, and carrot sticks.
